Top quality homegrown heritage tomatoes with a good homemade tomato sauce and pesto. Pizza perfection at its most humble. I love this combination with a small twist of sorrel pesto alongside the basil.
Method
Preheat your pizza oven to 375˚C and roll out your dough. Place onto a floured peel and start by spreading tomato sauce around the pizza base with the base of the spoon.
Blitz your sorrel pesto until smooth and season to taste to with lemon and sea salt.
Next arrange mozzarella, sorrel pesto and sliced heritage tomato.
Bake your pizza in the pizza oven for 2-3 mins turning every 30 seconds or so for an even crust.
Remove from the oven and top with freshly chopped basil. Finish with a drizzle of extra virgin olive oil, sea salt and cracked black pepper.

These stamps of approval help discerning foodies pick out the products that follow strict guidelines, celebrate traditional methods and are [...]
Shawarma Jackfruit and Baby Aubergine Pizza! I love the layers of shawarma spice that warm this pizza and complement the wood-fired crust. Serve with freshly chopped mint or coriander on top or a generous spoon of labneh on the side. It also makes a great vegan pizza option without the mozzarella. Method Preheat your [...]

The only nailed down ‘authentic’ Italian tomato sauce is the one laid out by the AVPN, the Associazione Verace Pizza Napoletana, which insists all its tomato sauce ingredients [...]
This white pizza follows the autumnal theme with thinly sliced celeriac, smoked pancetta and smokey, oozy burrata.
