Fontodi Organic Extra Virgin Olive Oil Chianti Classico opens with a deep green colour and an inviting aroma of freshly crushed olives, artichoke and wild aromatic herbs. On the palate it shows clarity and poise, with a fine balance between gentle bitterness and subtle spice carried by a clean texture and long, fresh finish. The flavour is vibrant, authentic and immediately expressive of its Tuscan origin.

Produced in the heart of Panzano’s conca d’oro, a south facing natural amphitheatre renowned for exceptional agricultural quality, this oil is made exclusively from organically grown olives cultivated on the Fontodi estate. It reflects the same care and quiet precision applied to Fontodi’s celebrated wines. Cold extraction within hours of harvest protects purity, definition and freshness.

Fontodi farms around 10,000 olive trees alongside its vineyards, planted across a series of hillside plots at altitudes between 400 and 500 metres. The trees are trained traditionally in a polyconical vase formation at a density of approximately 400 plants per hectare, set on marl rich soils that promote excellent drainage and natural concentration.

The olives are harvested entirely by hand at peak ripeness and pressed the same day to preserve natural aromatics and structural balance. Extraction is carried out using ultra modern stainless steel continuous presses that minimise oxygen exposure, ensuring longevity of flavour, colour and character. After pressing, the oil rests briefly in stainless steel, is gently filtered through cotton, and bottled early to capture maximum freshness and varietal clarity.

The result is an elegant, expressive and regionally true olive oil, ideal for drizzling over seasonal produce, salads, soups, cheeses, grilled vegetables, carpaccio and freshly baked bread. It represents the heritage, landscape and craftsmanship of Chianti Classico in its purest form.
